Harvesting is carried out by hand in small crates. The clusters undergo further quality control on a sorting table in the cellar before crushing.  To express the maximum potential quality from the grapes, each vineyard is harvested and vinified separately.
Harvesting period
Harvesting beings at the end of August for Pinot Noir, an early ripening variety, and continues from mid-September to mid-October for Barbera, Grignolino and Nebbiolo grapes.
